Roasted Carrots!

I LOVE roasted veggies. Other than burning them, you can’t really mess them up! And I actually kinda like the little burnt parts!

My new favorite, which I never even thought of before last week, is roasted carrots.

They almost taste like sweet potatoes, must be the sweet orange thing. I don’t know, but I know they are AWESOME!

Roasted Carrots with Smoked Paprika:





Bake 425 for 35-40 minutes. Turn once.

I ate them all before I remembered to take a picture. Oops!

Cheap, Easy, Delicious!

    I spent 2 weeks in your neck of the woods this past February and March and will be back. Since I had been following your blog we made a visit to your new store. VERY NICE!!!

    I send this comment to you today because I find much that you’re doing with your young family resonates with years when my family was your children’s ages. 25-30 years ago we ate what I would call raw food. Lots of it . Just like you no junk (sugar of any kind) etc…I told the boys they would/could have a bad food hangover. Wanted you to know that today you jogged my memory with the carrots. We use to call them TV dinners and would take assorted raw veggies wrap them in aluminum foil and toss on grill/firepit.

    We still are very conscious about our food…even more I’d say.

    I’m jealous you have so much Basil, we are just starting to see it come up. Your Pesto recipe is the same except I roast the pine nuts. Can’t wait to make that up this season. I have never froze it how does it do?

    Marla, we drizzle ours w balsamic vinegar. They are so yummy and even better leftover next day cold for breakfast:)
