A work of Heart

July 21, 2011 in Entertaining , Small Bites and Salads , Veggies and Sides

Earlier this week I hosted a Heartworks meeting at my house.

Heartworks is a non profit Acts of Kindness group that was created in response to the tremendous kindness that sustained so many families in the months and years following September 11, 2001.

The group is new in our area and I encourage you to read about it on the link provided. If you live along the Emerald Coast and are interested in joining, please let me know so I can send you more information.

I was absolutely thrilled to be able to host because I love feeding people and having them in my home!

I spent the day preparing food and hanging out with my dear friend Cat Clay! It was so fun to just spend the day in the kitchen with a friend. I could do that everyday and be 100% happy!

Brittany was kind enough to snap some pics of the food!

Roasted Veggies: Eggplant, Red, Yellow and Orange Peppers, and Onions. Season with salt, pepper, and garlic gold. Tossed in EVOO and baked at 350 for about an hour.

Red and Yellow Cherry Tomatoes with Mozzarella and Fresh Basil from our garden. Topped with a simple balsamic reduction.

Cucumber and Red Onion Salad. Fresh Cucumbers, Red onion, Apple Cider Vinegar, Lemon Juice, salt and pepper.

Chicken Salad. Chicken breasts baked with salt and pepper, tossed with home made mayo, and diced celery. Seasoned with salt and pepper.

Deviled Eggs. Egg yolks mixed with home made mayo, goat cheese, cayenne pepper, and salt. Topped with Green Onions and Bacon.

Maple Walnuts: Walnuts tossed with melted Butter, Maple Syrup , Cinnamon and Vanilla. Baked on parchment paper for 10 minutes at 350.

Chocolate bark: Melted dark chocolate spread on parchment with cashew, pecans, pumpkin seeds, cranberries and apricots on top. Chilled until firm.

And lastly a shot of the table!

What type of chalk do you use to write on your board and also what do you erase it with?

  4. looks like a delicious meal shared with friends! i think we are cut from the same cloth. i have chicken salad & caprese salad skewers in the fridge and i made some chocolate bark for a new mama over the weekend … chocolate, almonds & dried orange cranberries – her favorite. so yummy, so easy!

Thanks everyone! It is all simple food, packed with nutrients and flavor!

I use normal white chalk. Just crayola brand. I clean the board with just a wet rag. The secret is to make sure the chalk is wet before you use it. I usually just put it in a cup of water while and clean the board and then go from there. When it dries it looks great!
