That’s just Peachy!
Oh the peaches (and nectarines) were amazing! About half the size of a grocery store peach and about 100 times the flavor!
So good that hardly any made it into the house!
I did manage to wrangle about 12 of them and make a peach crisp, which got the double thumbs up from Shane!
PEACH CRISP (Adapted from ELANA’S PANTRY)
Approx. 12 small peaches or 6 large ones. Sliced ( I did not peel them)
1 tablespoon lemon juice
2 tablespoons arrowroot powder
1 tablespoon vanilla extract
1 1/2 cups almond flour
1/2 teaspoon sea salt
1/4 cup coconut oil
1/4 cup honey
Toss peach slices with lemon juice, arrowroot powder, and vanilla extract. In a separate bowl, mix the almond flour, salt, oil, and honey. Place peach mixture in a baking dish, and top with almond flour mixture. Cover and bake for 45 minutes at 350, then uncover and bake a few more minutes to get a nice crispy topping. Enjoy!
Side note:
I would seriously think twice before buying conventional peaches as they are heavily sprayed with pesticides which are detrimental to our long-term health. Feel free to google it if you do not believe me!
