Uno and Cucumber Salad!

Uno is our go to family card game. We try to remember to take the cards with us when we go on trips and even out to breakfast.

When Van was younger, he just played with his cards face up on the table,

but now that he can hold them up so we can’t see, ┬áhe is unbeatable!

This morning while they waited to go to camp, they played a few rounds. At one point, I came into the living room and they were playing a new “version” where everyone starts with only good cards face up. Okay. Whatever keeps you busy!

While they busied themselves I rounded everything up for the day including my lunch of leftovers.

The most delicious part being the Cucumber Onion Salad I made the other day.

Here’s how it goes:

2 normal sized cucumbers

1 red onion

1/2 cup Apple Cider Vinegar

1/2 tsp lemon juice

1/2 tsp salt

1/4 tsp pepper

I sliced the cucumber and onion using the slicing blade on my food processor. You could, of course do it by hand, but I like the slices nice and thin and consistent!

Mix the other ingredients in a bowl.

Pour over Cucumbers and Onions.

Refrigerate for a about an hour or more ( I let mine sit overnight)

Chomp down.

Say “Yum, this was so easy to make, and so good!”

Oops! forgot to pick that one before it turned yellow. It happens.


(Looks like someone needs to add some wood to the fireplace, hint hint!)

    Yum! Cucumbers from teh garden are the best. We made an orange cucumber salad form the epicurious app the other night that was great!
