Summer Babysitter!

Summer is our busy season at work, the kids are out of school, and we have a new baby who can’t really be on the go….so we put in pool!

I am all about a pool.

I grew up with a pool in my backyard, and most of my favorite childhood memories take place there.

There is nothing like summer, swimming, grilling and chilling in your own backyard!!!

We thought it was gonna be a kinda small, but big enough to get the job done kinda pool…

Turns out, it is bigger and better than we imagined!

We decided to go with a black bottom and Cumaru decking.

And we are soooo enjoying it. Lots of fun, flips and shenanigans!

I LOVE roasted veggies. Other than burning them, you can’t really mess them up! And I actually kinda like the little burnt parts!

My new favorite, which I never even thought of before last week, is roasted carrots.

They almost taste like sweet potatoes, must be the sweet orange thing. I don’t know, but I know they are AWESOME!

Roasted Carrots with Smoked Paprika:

EVOO

salt

peeper

Paprika

Bake 425 for 35-40 minutes. Turn once.

I ate them all before I remembered to take a picture. Oops!

Cheap, Easy, Delicious!

We have entirely too much basil!

Last year, I made lots and lots of Walnut Pesto. In fact, I still have one jar in the freezer!

It was really good, but I decided to give it a different twist this year.

Or maybe I should say less of a twist, since I really went back to basics. Pine Nuts.

DAIRY FREE PINE NUT PESTO

4 cups fresh basil leaves

1 cup pine nuts

6-8 garlic cloves

1 tsp salts

A few twists of pepper

1/4 cup EVOO

Add everything except EVOO to food processor, pulse a few times to start breaking it all up.

Slowly drizzle in EVOO until pesto is the right texture.

Shane was REALLY excited about this new jar of Pesto.

We both agreed that it was sweeter and smoother than the Walnut version.

As you can see above, I emptied my pine nut jar, but I defintelty plan to make a few more batches!

ALSO!! When I went to look for the Walnut Pesto recipe, I realized that it had not been added to my recipe page.

I am in the process of going back through old posts and making sure everything is there.
