Shredded Chicken Tacos

One of our new favorite things to eat is shredded chicken tacos.

They are super delicious, and probably the easiest thing I make!

In the morning before school I throw about 6 chicken breasts, one jar Zapata fire roasted salsa, and about 2 cups bone broth into the crockpot.

I usually set it on 8 hours because that allows us to eat an early dinner.

(Sidenote: I have no idea why that salsa is so much money on Amazon, but it is only like $3 at Publix.)

(Sidenote 2: It is by far the yummiest salsa ever! )

Once the chicken is done, I scoop it out and then shred it using a wood spork or something.

It falls right apart.

The first time I made it Avery could not stop picking at it!

Avery’s taco started with a blue corn taco shell and included pinto beans, chicken, raw goat milk cheddar cheese, salsa, and sour cream.

I had an Ezekial’s sprouted corn tortilla with mixed greens, beans, chicken, cheese, salsa and sour cream.

And Van just had a bowl with beans and chicken.

Shane wasn’t home.

Sorry dude.

If you wanted to make it more Paleo/Primal, you could leave off the beans and serve it as a lettuce wrap!

Holy Moly, they are soooooo good.

I may have just eaten the entire bag in one sitting.

Baby made me do it!

Working Lunch

This is where the magic happens!

Of course, I’d love to say this is NOT normal and the generally my desk is much tidier.

But that would be a lie!

I love greens and so even though I was craving something terrible and carby and bad for me for lunch, this salad totally hit the spot!

The trick is to add fun, yummy stuff and not just the old faitful salad mixers.

Yesterday we had:

Organic Spring Mix

Applegate Farms Feta and Spinach Sausage

Artichoke Hearts

Heirloom Tomatoes

Organic Goat Cheese

Braggs Dressing
