Last weekend, Shane and I had a big fight.

Marla: You asked me to make you that nut-oh-la and you have not even eaten it.

Shane: It tastes different, not as sweet and needs more salt.

Marla: I am NEVER making you anything EVER again.

But he said it real mean, I promise.

Anyway, about 10 minutes later the kids and I were in the kitchen making treats for the week.

First we made these ALMOND JOY BARS.

I misread the directions and accidentally used 3/4 CAN of coconut milk. It wasn’t until I saw that my batter was awfully runny that I realized the mistake. I went back and doubled the recipe (except the coconut milk) and fixed the problem. Highly recommend these. I almost never eat any of the treats I make, but these were really mild and not overly sweet. I need to play with the coconut palm sugar more in the future.

Next we made BROWNIES.

I always sub honey for the agave and pretty much use a different brand of almond butter each time. The almond butter definitely affects the taste but I have no clue which one is best since I don’t really pay much attention.

I think these are WAY too sweet and I even cut the honey down to just 1 cup, but my people like them and I aim to please!

Also worth noting!!! I always use coconut oil to grease my baking dishes and pretty much everything I makes sticks at least a little bit.

I have been meaning to try parchment paper but kept forgetting until now. LET ME TELL YOU, BRILLIANT!!!

Pico!

August 29, 2011 in Small Bites and Salads     3 comments

This weekend I was thrilled to reintroduce myself to fresh pico!

I have not made it in what seems like forever.

Probably since I don’t eat chips, or maybe because we didn’t grow our own tomatoes this year.

Either way, it has been way too long.

Pico!

6 medium Heirloom tomatoes (I had red, yellow and orange, so pretty!)

1/2 organic onion finely diced

1 large jalapeno deseeded and finely chopped (It was very mild and fine for kids. For more kick add another jalapeno)

Lots and lots of organic cilantro

Generous sprinkle of sea salt

Juice of two limes

We ate if for dinner with steak and for breakfast over eggs. Delish!

Funny how I used to think I needed a chip as a vehicle for foods like pico and now I realize a fork works just fine!!

Oh Lunch, how I loathe thee

What is it about making lunch that just so completely sucks? I pretty much make the exact same thing every day so I have no idea why I hate it so much.

Actually, I am getting better. I really am.

Is it just me?

People keep asking about lunch so I decided to look at what Avery ate yesterday. I simply can not focus on just lunch. Sorry.

Breakfast: Sausages

Lunch: Applegate Farms Pepperoni, Organic Carrots, Organic Cherries, Organic Applesauce, and Navitas Power snacks.

After school snack: Goat Milk Yogurt, chia seeds, pecans, strawberries, and local honey.

Dinner: Kale chips (not cooked yet in pic below) and Roasted Chicken

(Boxes HERE. It does not look like any of the lunch boxes are on sale right now, but they will be eventually, so I advise you to keep watching!)
